That's kind of what I'm asking- is it better to go from the start or are there other books that aren't too jarring with the huge world already established.

The early books (Colour of Magic, Light Fantastic, and Equal Rites) are very clearly the warmup phase, and so can be a little inconsistent with later books. You could start with those, but Wyrd Sisters (for the witches), Guards! Guards! (for the Guard) and Mort (for Death) are good choices as well.
Small Gods and Going Postal are excellent standalones.
"Guards! Guards!" is really the first book (with the arguable exception of Mort) that has massive continuity. "Equal Rites" for example is a fun book, but it's wildly contradictory to everything else that follows. Most of the other books before GG were one-offs. I still have some affection for Rincewind and twoflower, but the series really improved once he got out of that business.
Personally, my favorite books are the "industrial revolution" ones that he's been writing a lot of lately. This loose series started with Feet of Clay, and hit an absolute pinnacle of beauty with "going postal". It also ties well into the city watch books - Ankh-Morpork is a jokey version of Lankhmar (if you don't know what that is, DEAR GODS FIX THAT IMMEDIATELY), and I think discworld is at its best when it concentrates on the city.

Currently, I'm rereading the Watch books and falling in love with them all over again as well as considering buying Where's My Cow? because why not. Has anyone here read/bought it?

I liked The Last Hero. It wasn't especially the best in terms of writing, but the drawings more than made up for that.
They were amazing. And it was pretty decent sized too, which you usually don't expect from a picture book.

I'm also finished the entire main series of Discworld, all I've got left to read is "Unseen Academicals" and "Witches Abroad" (skipped because I couldn't get into it, most of the early witches books bored me). My favorite story arc has to be City Watch. Sam Vimes is awesome. My least favorite book had to be "Wyrd Sisters", somewhere halfway through the book I slapped it shut and moved on to "Pyrimids". My favorite book... can't say, but I know that it was one of the City Watch ones.
I just finished Snuff.
It really does feel like an ending to me. Especially because I always figured it would be over when

So far I've only read Hogfather, but I bought Snuff and Reaper Man recently (Reaper Man in both English and German!) and I'm really excited to read them. Pratchett is a genius.
