The closest I've ever come to EV training has been trying to vaguely remember what/how many EVs a certain species provides, and trying to prioritize that species when doing some level-grinding between gyms. I've never really done a more precise regimen or anything, just vaguely trying to shoot for a ballpark in training one stat or another.
Also, the term EV is way too close to the name Eevee. That was poor planning on the part of whoever coined the term.
ugh.
In fairness some of the Eevee forms are pretty decent statwise and their designs aren't exactly hideous, it's not surprising that they are popular.
I EV train all my guys, once I've beaten the main game anyway, there are a few folks around here who battle on occasion so not EV training is a sure fire way to get my teams kicked in. Mostly I've just been making mono-type teams though, I figure once I've got 6 guys of every type I can start mixing and matching to make more balanced teams.

I EV train pokemon after I've finished going through the main story of a pokemon game. No sense in wasting time doing that when none of the NPCs have any sort of battle strategy. My EV trained Shuckle does terrible things to people and they get violently angry.

It took me forever before I actually even understood EV training, then I would try and would always screw up somehow, so I don't do that anymore...but dang some of the stuff from attempting stayed embedded in how I play. I still will sometimes soft reset for "good" natured event pokemon. @~@ Then once I get it I remember that I'm never gonna EV train the darn thing.

I'm so glad they added the power items in, with pokérus it makes EV training a breeze compared to the older games. Plus B/W has some awesome EV training spots for all the stats barring defense. Makes things so much quicker.

You can force a switch with either Encore or Taunt, honestly, but no one I've played against uses either move.
It knows Toxic, Stealth Rock, Protect, and Rest. No one's really used it to set up against either.
I've stalled against a full team of 6 with it before.

Stallers are the best. I have an umbreon staller and have been meaning to raise a stallrein after one ripped my teams to shreds extremely slowly.
I've even managed to pass a few acid armor boosts and an aqua ring to my umbreon before, which made him into an unstoppable wall. :3
It was so funny having stealth rocks set up and all 6 of his pokemon poisoned. I just rested when my health got low and protected against Earthquake and Fire Blast.

Oh, hey, so, I just finished the main plot of Pokémon Diamond for the first time. I'm a little slow.
Thoughts: I liked the lake guardians a lot more than I thought I would. And, the whole "Dialga trusts you to calm it down" thing was really sweet, but it'd be more convincing if it didn't start with such a low happiness.
I can't wait to get started making a contest team, now.
I liked contests a lot more than the musical stuff that replaced it in BW. It was a bit awkward to have to train new pokemon with optimized movelists and natures for that minigame rather than just using your regular battle-bred team, but it was an interesting change of pace.
I'm probably one of the few people in the world that love love love loved Pokeathlon more than all the minigames combined, hell Soul silver is one of my all time favorite re-releases. I just really hate what happened to the game corner. I hate card flipping soooooo muchez.

I've had an idea for a while now that I think would be pretty neat, so I thought I'd share it here:
In quite a few cases I much prefer the look of NFE Pokemon to their evolved form/s. I'm sure a few people out there would agree with me. I wish I could use them more competitively, but the problem is they're noticeably weaker and, in most cases, can't really be used. But what if you could make NFE Pokemon more viable in the main metagames? Eviolite was a good step, but most NFE Pokemon still weren't up to scratch AND it took up the item slot. I propose an item(either a tonic or temporary hold item) that when used/held; when a Pokemon evolves, instead of evolving into it's next form, it evolves into itself. It maintains everything about itself, ie. form, typing and abilities, but gains the base stats of the form it should've just evolved into. Another upside is that they'd learn moves quicker, but the downside to that is that they potentially miss out on a deeper movepool that opens up with an evolved form. There would of course be flags in place to prevent the use of items such as Eviolite and Light Balls, that would make some Pokemon ridiculously powerful.
In most cases it would be mostly aesthetic, ie. just getting a power increase, but some Pokemon could possibly benefit. For instance; one of my favorites, Dragonair, would keep Shed Skin and not gain the secondary Flying typing. Shed skin is a really nice ability that is sorely missed once it evolves. Not gaining the flying type is arguably beneficial as:
+ no 4x ice weakness
+ not weak to Rock (Stealth Rock)
+ keeps resistance to Electric, but:
- doesn't get resistance/immunity to Bug, Fighting and Ground
- resistance to Grass doesn't increase.
But yea, that's my idea. I don't think it's a game-breaker or anything bad since it's mostly just an aesthetic thing. The one problem I can see is with Vigoroth and Slaking, but that's as simple as banning from specific tiers. This wouldn't of course make ALL NFE Pokemon viable since some family lines aren't up to scratch to begin with, and not all Pokemon would benefit from pseudo-evolving, but it would at least broaden the metagame quite a bit, even if it is mostly just an aesthetic broadening.
As awesome as that sounds, it would get hella complicated inside game code. I think that's the biggest issue, honestly.
